Gluten Free Apple Cinnamon Muffins

Apple treats are a huge favorite in our household, and these Gluten-Free, Apple Cinnamon Muffins have become a weekly staple because the boys LOVE them.

I don’t know about you guys, but the holidays are such a magical time for our family but they are also extremely hectic. I love these muffins because they provide all the holiday spice flavors you love, but they’re also quick and easy to grab when you’re on the go.

And if you’re anything like me, anything that offers the best of both worlds is a total win in my book. Between gift shopping, gift wrapping, card sending and then…well, life- an easy, healthy grab-and-go muffin is the perfect treat! These muffins are dense and filling. I’ll eat one in the morning with some cashew butter and be perfectly satisfied until lunch.

Dry Ingredients

1 1/2 cup gluten free oat flour
3/4 cup almond flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
1/4 tsp nutmeg

Wet Ingredients

1 cup cinnamon applesauce
1/2 cup coconut sugar
1 room temperature egg
1/3 cup coconut oil
1 tsp vanilla

1 apple, peeled & diced

Optional

1/4 cup chopped nuts + more for topping

 

Directions:

Preheat oven to 350 degrees Fahrenheit and grease muffin tin.

In a small bowl, mix together dry ingredients.

In a mixing bowl, mix together wet ingredients. Add dry ingredients into wet ingredients until fully combined and then fold in diced apples and chopped nuts (if using.)

Bake for 20 minutes or until toothpick comes out clean.

Let sit for 10 minutes before removing from muffin tin.

Makes 12 muffins.

Tip:

We are huge cinnamon lovers in this household so we use 1 tsp of cinnamon to give it a really rich cinnamon flavor, however, if you would like a more mild and traditional flavor, I would stick with 1/2 tsp cinnamon.
